Matcha (抹茶) is a fine, powdered green tea used particularly in the Japanese tea ceremony, as well as to dye and flavour foods such as mochi and soba noodles, green tea ice cream and a variety of wagashi (Japanese confectionery). The most famous Matcha-producing regions are Uji in Kyoto (tea from this region is called "Ujicha"), Nishio in Aichi (tea from this region is called "Nishiocha") both on the main island of Honshū; Shizuoka, and Northern Kyushu.

Does matcha, green tea, and genmai cha have calories?

I have a pack of tea from Japan, it’s the loose tea kind. This tea is a mix of green tea leaves, genmai cha, and matcha powder. On the side of the bag, though, it says that 1 cup is 366 kcal. As far as I know, neither green tea, genmai cha, or matcha have ANY calories. But perhaps the manufacturer assumes you are EATING the genmai (rice)? I drink a ton of this stuff every day, and I wasn’t aware that I was drinking so many calories!
thats the strangest thing i’ve ever heard of. I didn’t think even if you ate the tea leaves it would be that many calories. something is definitely wrong with that. I wouldn’t worry about caloric intake in tea, it’s very low, if anything.

Does anyone have a good recipe for a japanese matcha cheesecake?
I made one once (I also made a matcha poundcake) and I just added either 3 or 4 tablespoons of the powdered tea to my standard cheesecake recipe. It turned out very well.

How long does Matcha (powdered green tea) stay fresh for?

I brought some back from Japan. It came in a little tin, in a sealed bag. I opened the bag and put it in the tin. How long should it be good for? Its been about 3-4 weeks and I haven't finished much of it. I don't want to waste it, so I'll still drink it even if its not its freshest, but still tastes good. Any help?
On the internet, I've seen a variety of comments. One said it can only last 30 days. Another indicated it could last for a year. I'd go with the average and keep it in the fridge:

Some other ways to use it up? If you can eat dairy, the recipe of Matcha Latte (link) looks good. Or you can mix it in some vanilla ice cream. Or make your own green tea ice cream.

I think it is from the same plant that is used for green, black and white tea but it is prepared differently. Anyone know the specifics of its preperation etc.? Thank you.
Matcha
When you drink matcha you consume the leaves, unlike other green teas. For this reason matcha contains, by volume, higher concentrations of catechins and vitamins.
There are 2 types of matcha- koicha and usucha. These are chanoyu (Japanese Tea Ceremony) terms and literally translate as "thick" and "thin" tea.
Usucha comes from the leaves of tea plants that are less than 30 years old. Koicha comes from the first harvest of plants that are a minimum of 30 years old.
In tea ceremony koicha is brewed with less water than usucha. Koicha has a naturally mellower and sweeter taste and the tea is made thicker for that reason..
Prepare Matcha Your Way
Matcha preparation is personal, and there are no rules outside of Tea Ceremony. Well, there is one rule- don't use boiling water. That's all!
If you are new to green tea it may take you 2 or 3 attempts to find the concentration that is right for you. Koicha when prepared in tea ceremony is very thick, like syrup. If you use usucha for this the tea would be somewhat bitter.
Most customers do not prepare matcha to the syrupy thickness of tea ceremony koicha. While there is a qualitative difference between the 2 (thick tea is composed of the highest quality leaves) there is also a significant difference in cost. If you have not tried matcha before we recommend that you purchase our inexpensive usucha first and see if you like matcha.
Matcha comes from gyokuro leaves that have been steamed and dried. All stems and veins are removed from the leaves. The pure dried leaves (tencha) are then stone ground into a super fine powder that is the consistency of talc. Matcha is uniquely Japanese.

Most high quality matcha comes from the Uji Tawara area, which is the premier matcha producing region in Japan. Uji Tawara is famous in Japan for shincha, matcha, gyokuro, and sencha.

This region has perfect conditions for producing high quality gyokuro and matcha- misty climate, sloping hills, and a wide range of temperature between day and night.
To prepare quality matcha you will need 2 items- a matcha bowl and a bamboo whisk. The chashaku (bamboo matcha spoon) is not necessary. Some customers, however, enjoy using the chashaku as it adds to the ritual effect of preparing the tea.
For strong (thick) tea use one level teaspoon for 4 to 6 ounces of water. For medium (thin) tea use half or one quarter that amount. First put the powdered tea in the bowl. Then pour hot (not boiling) water over the leaves.
Whisk the leaves into a frothy brew, and
drink. Healthy, invigorating and delicious!

Have I spoiled my expensive Matcha green tea??

I bought some organic Matcha green tea a few months ago. I used it once and then put it in my cabinet. This morning I realized that I should have refridgerated it after opening.
Did I ruin my thrity-dollar stash of green tea? Have all of the healthy compounds been destroyed?
It should be O.K. as long as it was covered.
