Kombucha Tea?

19.September, 2008

Every time I make Kombucha Tea I use the same recipe, black tea as a base, brown sugar, and of coarse the mushroom.
Are there any other variations of the tea? Could I use green tea as the base? and if so would the benifits from the tea still be there?

I've never made Kombucha myself, but I work in a cafe where it is served. Our basic Kombucha is made from oolong tea, which is what you're probably using, but we also have a green tea variation. Most of the goodness from Kombucha tea comes from the cultures of microorganisms which degrade it anyway and not from the actual tea itself.

Bottom line: drink Kombucha for the digestive benefits it brings, but if you want the antioxidants and EGCG, stick with straight-up green tea. Both are yummy anyway.
